The history, chemistry and biochemistry of beer provide a rich platform for chemical education. This talk, from University of Oklahoma doctoral candidate Nick Godman, will cover general concepts of fermentation and alcohol metabolism; some of the mechanisms that occur to generate flavor and color components of beer; and how the speaker used those concepts during course instruction. Educators, chemists and beer enthusiasts alike will enjoy this unique presentation.
